Pineapple Chicken

So Brandon works 2nd shift and that is 3pm-11pm. Since we don't have dinner together, we have lunch which is like our dinner. So today for lunch, I came up with something crazy and new, called Pineapple Chicken.

We had no idea how it was going to turn out but it turned out delicious!


Pineapple Chicken, with rice and on top of the rice is a pineapple sauce like and broccoli.

  2. you take a chicken breast as many as you want, and then season it with some season salt (best stuff ever!) then cut slits on one side and poor some pineapple juice on them and let the chicken breast soak it up. put olive oil in the pan and let it heat up. place the chicken in the pan (searing it) then after about 2 minutes on each side for a good sear then pour about 1/2-1 cup of water in it so the water starts to boil, turn heat down to a medium. (Jackie- just like you do with the lemon-parsley pork chops). thats all for the chicken.

    for the sauce, take the pineapple chunks and puree it in a blender. add fresh orange zest, parsley, a hint of paprika. (this is all based on preference, add whatever spices you think would work well with pineapple. but don't add thyme. we tried that it wasn't good in it. you can also add some orange juice in it too to add more of the orange flavor.) if i was to do it again, i would just do pineapple, orange, and parsley.
